
Our Students
Formed by UNLV Hospitality majors, this class attracts the best and brightest amongst our student body looking to hone their craft and experiment in a live environment. Here, students are able to test theory and see the real-world application of their studies. This class is offered in both the Fall and Spring semesters each year and is filled by approximately 25 students in each session. These students form into teams where they must work together to research and develop every single step that goes into creating a functional and viable restaurant. Their hard work and dedication throughout the semester culminate in four live services where we open our doors to the public, and students share their creations.
Due to the challenging nature of getting a restaurant up and running, students are faced with a variety of challenges that not only enhance their academic growth but also serve to enrich their personal development.
Meet our Instructors

Chef Christopher Lindsay, M.Ed. has a diverse academic and industry background in food, beverage, and hospitality. His professional career afforded him the opportunity to travel and work in some of the most well-known restaurants, hotels, and casinos in the country. He received training in classical French techniques, although his true passion is cooking a fusion of different cuisines.
Koco Heo, M.S. has cultivated vast knowledge and experience in the Hospitality Industry over the past twenty years. With a focus on Nightlife, Food, and Beverage, she currently collaborates with both Zouk and AEG. Koco’s passion and enthusiasm for hospitality have led her to inspire and mentor students, better preparing them for future careers.
